Refreshing Cajun Salmon Salad with Lemon Dill Protein Ranch Dressing

The sun is shining today and automatically gives me a craving for something light and refreshing! 

Yesterday I was grocery shopping and found come Cajun smoked salmon on sale so I had to pick it up. We all know that “sale” for fish means you’ve gotta eat it up soon, so I thought what a great opportunity to make a jumbo yummy salad. 



Layered: 

  • Chopped romaine hearts and fresh spinach

  • Sliced cucumbers

  • Grape tomatoes

  • Sliced avocado

  • Flaked Salmon on top 


Dressing:

This is super easy, and I do this so I can watch my portions otherwise I make salads into ranch soup. 


  • 1 small container Chobani, plain, non-fat greek yogurt 

  • Ranch seasoning (I use a tub from Costco) 

  • Dill (dried in seasoning shaker)

  • Lemon juice (fresh or from squeezie bottle) 

I don’t measure anything, so I start light and just add to taste. Stir right into the yogurt container to save on additional dishes (score!). Once you have the flavor you prefer, add a little bit of water and stir to the consistency you like. Pour on your salad dig in!   

The great thing about this “ranch” is you know that it’s only 80 calories (plus seasoning) 0 fat, and 15 grams of protein...even if you use the whole tub!
